Pomegranate Black Pepper Salad


Timing:

Prep Time: 15 minutes
Cook time: N/A

For the salad:
Mixed baby greens
Crumbled feta cheese
Fresh pomegranate arils
Combine greens in a large bowl and sprinkle feta cheese and pomegranate arils over the top and set aside.

For the dressing:
1 tablespoon Dijon mustard
1 teaspoon finely minced shallots
¼ cup Prometheus pomegranate black pepper
¼ cup extra virgin olive oil
Salt and pepper

Combine Dijon mustard, shallots and Prometheus Pomegranate Black Pepper in a small bowl. Slowly whisk in olive oil. Season with salt and pepper to taste. Pour dressing over salad and gently toss.
