Capsaicin Spiced Cranberry Sauce


Give thanks for fruit and spice with the spicy new take on a traditional classic. We’ve been experimenting with a couple pounds of cranberries and we have four new ways to spice up your Thanksgiving dinner this week.

Timing:

Prep Time: 5 minutes
Cook time: 15 Minutes


Materials:

  • 16oz (1 bottle) Prometheus Springs of choice
  • 1/4 cup sugar
  • 24oz fresh cranberries

Directions:

Pour a bottle of Prometheus and the sugar into a large pan and bring up to temperature. While waiting for it to come to a boil, clean your cranberries. Once the Prometheus is boiling, add in the cranberries. Once the mixture starts comes back up to temperature after adding in the cranberries and begins boiling again lower the temperature to low. Let it simmer for 20 minutes. Stir occasionally.

 

We experimented with four different flavors of Prometheus to understand how they worked with the cranberry.

Lychee Wasabi – This sauce was the favorite of the children we gave the sauces too. The Lychee comes in strong and gives a great fruity note. The wasabi is subtle and pairs beautifully with the bitterness of the cranberries.

Lemon Ginger – Another very popular option. The ginger flavor comes through strong and makes for a lovely sauce.

Pomegranate Black Pepper – This one came off as the most classic of the four. It was pretty mild and tasted close to what one would expect from a cranberry sauce.

Citrus Cayenne – The grapefruit notes in this flavor paired beautifully with the cranberry and the cayenne comes through strong. If you want it spicy, go this route.
